CFL Project

CFL stands for collective fermentation line.  It is a project that focuses on fermentation methods, which are becoming popular in the market, due to its effect in enhancing notes and aromatics of the coffee.  The line aims to highlight the latest harvests that feature the uniqueness that is offered by fermentation, but what is coffee fermentation?

     Coffee fermentation is a pivotal stage in the coffee bean processing journey, playing a crucial role in shaping the final flavor profile of the coffee. During fermentation, naturally occurring enzymes break down the sugars in the mucilage surrounding the bean, transforming them into acids and aromatic compounds. This process occurs in various environments, including water tanks or open-air fermentation beds, and can last from a few hours to several days, depending on desired flavor outcomes. Shorter fermentation times often result in cleaner, brighter flavors, while longer fermentation times can yield more complex and fruity profiles. Specialized fermentation techniques such as anaerobic fermentation and carbonic maceration have gained popularity for their ability to produce unique flavor profiles. Microbial activity, including the presence of naturally occurring microorganisms and intentional introduction of specific strains, further influences fermentation outcomes. Properly managed fermentation not only enhances flavor complexity but also improves bean consistency and helps eliminate undesirable flavors, ensuring high-quality specialty coffee.
